Grandma Mae Jule’s Fruit Salad

I typically only have fruit salad for special occasions.  And quite honestly, if I’m hosting and you ask what you can bring there’s a good chance it’ll be fruit salad.  It’s not that I don’t like it, I just have a hard time using up all the fresh fruit before it goes bad.  This recipe is a little different in that it is a creamy, fluffy fruit salad that uses canned fruit cocktail.

This one is a family recipe of my grandma Mae Jule’s, my mom’s mom.  A huge bowl of this fruit salad was on the table at every Thanksgiving, Christmas, and Easter that I can remember (and likely long before that).  Grandma was such a great cook, and everything on the table was so good!  Turkey, mashed potatoes and gravy, homemade stuffing, green bean casserole, this fruit salad…. There was only one issue:  How to heap everything on your plate without the gravy invading everything!  Does anyone remember these Tupperware trays?  They certainly came in handy!

Like most of grandma’s recipes, this didn’t come with measurements.  So as I made it I wrote down what I used, but you can certainly taste as you go and modify the amounts as you see fit.  You can also multiply it to feed a crowd.  Oddly enough, the part I remember most growing up were the peeled grapes in this salad – so make sure your fruit cocktail has grapes in it!  By today’s standards, it’s probably as much a “fluff” as it is a fruit salad.  Regardless of what you to call it, the result is still delicious.

Making this recipe takes less than 10 minutes.  It is best served well-chilled, but if you think you’ll have to whip it up last-minute just keep your can of fruit cocktail in the fridge!

Grandma Mae Jule’s Fruit Salad

1/2 cup heavy whipping cream
1/3 cup powdered sugar
1 teaspoon vanilla extract
1 can fruit cocktail, drained
1 banana, sliced
1 cup mini marshmallows

To make the whipped cream, whip together the heavy whipping cream, powdered sugar, and vanilla using a hand mixer or the whip on your stand mixer.

With a spatula, mix in the fruit cocktail, then the bananas, then the marshmallows.

Chill before serving.

Makes about 5-6 servings
